Activity Maturex L is available with 1500 ADU/g. One alpha-Acetolactate Decarboxylase Unit (ADU) is the amount of enzyme which, under standard conditions, by decarboxylation of alpha -acetolactate produces 1 µmol of acetoin per minute. Food-grade status Maturex L complies with the recommended purity specifications for food-grade enzymes given by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the Food Chemicals Codex (FCC), supplemented with maximum limits of 5 x 104/g for total viable count and 102/g for moulds. As shown in Figure 1, it prevents the formation of diacetyl by catalyzing the decarboxylation of alphaacetolactate to acetoin. Thereby the maturation period can be eliminated or greatly reduced.
